MEZQUITE

Mezquite, is a very important tree in the Oaxacan ecosystem, it fertilizes the land where it grows and is very commonly used to  reforest the land, It produces pods which were consumed before the conquest as a source of protein, at present it is regaining value in the new Oaxacan cuisine where it is used to make bread.
